The University Dining Center at Minnesota State University Mankato is a representation of the University’s commitment to sustainability and to providing cutting-edge facilities for its students. The modern building’s sustainability features include composting of food waste, LED lighting, and heat recovery technology.

 

The University Dining Center has the capacity to serve 3,000 students during each meal, with efficient flow throughout the facility in order to alleviate long lines and crowding around the food venues. The AYCE facility features a number of different options in the serving area, including a bake shop, allergen free station, an exhibition cooking station, pizza station, classic “comfort” foods, a grill & deli, salad bar, and ice cream station. The new facility aims to enhance the sustainability on campus, provide transparent food preparation, and increase community throughout campus.
