Tarah Schroeder, Executive Principal in Ricca’s Denver office, was recently featured on Foodservice Consultants Society International The Americas’ On Tap Podcast, hosted by Wade Koheler. In this interview-style podcast, Schroeder discusses how she got into the foodservice consulting industry, what she has been doing during the COVID Pandemic, and gives advice for those looking to break into the foodservice industry themselves.
PROJECT SPOTLIGHT: UNIVERSITY OF CALIFORNIA SAN DIEGO
At the Canyon Vista Marketplace on the University of California San Diego campus, Ricca worked with Studios Architecture and the University’s Housing, Dining and Hospitality Department to create a Halal-Certified dining facility that encourages transparency and echoes the diverse campus population.
The renovation converted a dated cafeteria-style dining facility to a modern market with four foodservice platforms, including Fusion Grill; Fresh, offering soup, salads, and juices; Three-Sixty, offering entrees and sides; and Earl’s offering coffee tea and smoothies.
