Kramer Dining, the from-scratch dining facility at Kansas State University, uses display cooking to emphasize and support the school’s goal of informing students the impact of food choices though nutrition education and preparation transparency. The 10+ made-to-order platforms provide variety to students by serving up global fare such as sushi, crepes and classic Italian cuisine, innovative dishes from the plant based protein station, plus American favorites from the grille— which features freshly ground beef patties through a collaboration with the animal science department. The All-You-Care-to-Eat format changes with the help of sliding glass walls to provide after-hours options from the Grille and Bakery for sweet and savory food offerings throughout the evening. 

 

Continuing the school’s legacy as a leader in foodservice education the dining hall also features an immersive and fully equipped teaching platform, The Plate. The venue hosts classes taught by dining services management professionals with joint appointments in the College of Human Ecology, as well as, food and wellness programming for residence hall students and culinary workshops led by guest chefs. Ultimately, Kramer Dining has been successful in embodying the school’s commitment to fresh and healthy foods, while simultaneously building a connection between its hospitality and dietetics program with living learning opportunities and life skill training.
